Features an ultra-sharp cutting core crafted from Japanese steel Aogami Super steel (Blue Super Steel), renowned as one of Japan's premier carbon steels.
It boasts exceptional edge sharpness and outstanding retention. Capable of reaching a high hardness of up to 63 HRC without compromising on brittleness.
The outer layer is SUS-405 clad steel. Avoid bending, bumping, and levering at all costs.
The octagonal handle is constructed from magnolia wood. It is meticulously hand-polished, ergonomically shaped, and designed for superior hand control. This knife is suitable for both right and left-handed users.
Never wash the knife in the dishwasher.
